Would it be possible to have two versions of a theme? One with the categories and products and one without? I understand the significance of including them and sure it's just a minor annoyance to remove them after installation, but it is a wish.

A tad bit more work, but ultimately easier to manage would be a "Demo Data" module. When activated, adds the demo data to the store. When Deactivate, removes it...so you wouldn't technically need to manage two Theme libraries.Bruce Golub
